Well, we were going to celebrate Christmas ... but life got too busy!

Then we thought Christmas in July ... but it got to cold and wet and who could bother ....

MENU

Earth Fire Wind Water
Spiced Beef Shin Slivers, Dragon Dumpling, Ginger Chicken Slices, Crunchy Jellyfish Ribbons

Tea Smoked Duck
Tender whole duck cooked over smouldering tea leaves infusing fragrant smoke flavours into these juicy morsels

Fortune Chicken
Boneless whole chicken smothered in prawn paste, lightly fried until golden

Mongolian Lamb

Sizzling fillets of lamb in a spiced garlic bean paste

Sticky Pork Cubes

Succulent pork hock slowly cooked in the Empress' own master stock, deboned, compressed to a terrine and liberally glazed with a moreish sticky savoury sauce

Pipa Tofu

Tofu dumpling blended with seafood and pork, shaped in the likeness of the Chinese musical pipa instrument, deep fried and served with oyster sauce dip

Garlic Kale

Shredded English kale leaves, wok tossed with garlic

Steamed Rice

White Jasmine rice

Followed by a choice between:-

Lychee Mousse

Light mousse of lychees and cream topped with lemon granita and lychee caviar

OR

Coconut Sago Pudding
Pearls of sago immersed in coconut milk flavoured with gula melaka syrup
